On my recent trip to London, I was visiting my good friend and I just HAD to make her porridge! However, being a student we did not exactly want to splash out on fancy ingredients. We did, however want it to be a London theme because WHEN IN LONDON one must CELEBRATE that, porridge style.
Having beeen hyping up the previous 'custard' porridge creations my friend seemed keen to try one so what better way to get it in there with her favourite biscuit, the CUSTARD CREAM! A Victorian invention of two classic biscuits sandwiching a vanilla custard flavoured cream (Est. 1908)

I think as far as flavours go, this is a classic! I just think that the combination of porridge oats and custard is a DREAM because it basically resembles rice pudding (but with oats) like a dessert for breakfast, but it's not too sweet! Also the texture of the custard creams really makes for a pleasing overall experience, and hey, there's NOTHING more comforting than custard!

Yep we were on a budget so here's how we managed it!
HAPPY PORRIDGING
- Oats 1.5 cups
- Milk 2 cups
- (Half a tin for cooking, half for on top of) custard (tinned if you're lazy like me, powdered if you want consistency control or HECK go fancy and make your own egg custard)
- Custard creams (as many as your stomach desires...I had three)
- a sprinkling of castersugar (to taste)
- Follow basic oat recipe (see earlier post) But using the quantities of oats to milk as above
- It may seem like there is not enough milk here but NEVER FEAR this is where the custard saves the day! Add in half the tin of custard to your oats and milk mix before you start cooking them
- If your oats are thickening up nicely and you've added enough sugar and custard to your palettes liking, then serve up!
- Using the other half of the tin of custard, and those MAGNIFICENT custard creams, decorate in whatever way you feel truly expresses your inner artist!
